4 medium zucchinis

2 cups cooked chicken, shredded

1/2 cup Buffalo sauce

1/4 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup green onions, chopped

Salt and pepper to taste

Optional garnish: ranch dressing, additional green onions

Instructions
 

Preheat the oven to 400°F (200°C).

    Slice the zucchinis in half lengthwise and scoop out the insides to create boats.

      In a mixing bowl, combine the shredded chicken, Buffalo sauce, cream cheese, cheddar cheese, and chopped green onions. Season with salt and pepper.

        Fill each zucchini half with the chicken mixture.

          Place the filled zucchinis on a baking sheet and bake for 20-25 minutes or until the zucchinis are tender.

            Remove from the oven, let cool slightly, and garnish with optional ranch dressing and more green onions if desired.
