For the Spice Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground ginger

½ teaspoon ground nutmeg

½ teaspoon ground allspice

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup buttermilk, at room temperature

3 large eggs

1 teaspoon vanilla extract

For the Eggnog Buttercream:

1 cup unsalted butter, softened

4 cups powdered sugar

½ cup eggnog (store-bought or homemade)

1 teaspoon vanilla extract

½ teaspoon ground nutmeg (for garnish)

Instructions
 

For the Spice Cake:

    Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, spices (cinnamon, ginger, nutmeg, allspice), and salt.

        Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

          Add Eggs and Vanilla: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

            Alternate Mixing: Gradually add the dry ingredient mixture, alternating with the buttermilk, beginning and ending with dry ingredients. Mix until just combined.

              Bake: Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

                Cool: Once baked, remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.

                  For the Eggnog Buttercream:

                    Beat Butter: In a large bowl, beat the softened butter until creamy.

                      Add Sugar and Eggnog: Gradually add the powdered sugar, beating at low speed until well combined. Then stir in the eggnog and vanilla extract until smooth and fluffy. If the frosting is too thick, add a little more eggnog until you reach your desired consistency.

                        Frost the Cake: Once the spice cakes have completely cooled, place one layer on a serving platter. Spread a layer of eggnog buttercream on top. Place the second layer on top and frost the top and sides of the cake.

                          Garnish: Sprinkle ground nutmeg on top of the frosted cake for an extra festive touch.
