2 cups fresh peaches, peeled and sliced

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup rolled oats

1/4 cup chopped pecans (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

    In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

      Add the egg and vanilla extract, mixing until well combined.

        In a separate bowl, mix together flour, baking powder, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing just until combined.

          Fold in the sliced peaches gently into the batter.

            Pour the mixture into the prepared baking pan and spread evenly.

              For the crumb topping, combine rolled oats, flour, brown sugar, butter, and chopped pecans (if using) in a bowl until crumbly. Sprinkle the topping evenly over the batter.

                Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
