1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup whole milk, at room temperature

3 large eggs, at room temperature

2 ½ tsp baking powder

1 tsp vanilla extract

½ tsp salt

¼ cup vegetable oil

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, and salt. Set this mixture aside.

      Cream Butter and Sugar: In another bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until the mixture is light and fluffy—about 3-4 minutes.

        Add Eggs and Vanilla: Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Add the vanilla extract and mix until just combined.

          Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the butter-sugar mixture, alternating with the milk. Start and end with the dry ingredients (dry, wet, dry). Mix until just combined—do not overmix as that can lead to a dense cake.

            Incorporate Oil: Fold in the vegetable oil gently until fully combined. This step will help keep your cake moist.
