Ingredients
  

3-4 pounds of oxtails

1 large onion, chopped

3 cloves of garlic, minced

2 cups beef broth

2 tablespoons tomato paste

2 teaspoons Worcestershire sauce

1 teaspoon thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons vegetable oil

2 carrots, chopped

2 stalks of celery, chopped

Fresh parsley for garnish

Instructions
 

Prepare the Oxtails: Season the oxtails with salt and pepper. In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the oxtails on all sides, about 5 minutes per side. Remove and set aside.

    Sauté the Veggies: In the same pot, add the chopped onion, carrots, celery, and garlic. Sauté until the onion is translucent, about 5 minutes.

      Create the Sauce: Stir in the tomato paste, Worcestershire sauce, thyme, and paprika. Mix well and cook for 2 minutes.

        Combine Everything: Add the browned oxtails back to the pot along with beef broth. Bring to a boil.

          Simmer: Reduce heat to low, cover, and let it simmer for 3 hours until the oxtails are tender and flavorful. Stir occasionally.

            Serve: Once cooked, serve oxtails over rice or mashed potatoes. Garnish with fresh parsley.
