Ingredients
  

1 lb smoked sausage, sliced

4 medium potatoes, diced (Yukon Gold or red)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, chopped

1 tsp smoked paprika

1 tsp dried thyme

1/2 tsp crushed red pepper flakes (optional)

3 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the diced potatoes, onion, garlic, and red bell pepper. Drizzle with olive oil, and sprinkle the smoked paprika, dried thyme, crushed red pepper flakes, salt, and pepper over the top. Toss to coat evenly.

      Add the sliced smoked sausage to the bowl and mix until everything is well combined.

        Transfer the mixture to a large baking dish, spreading it out in a single layer to ensure even cooking.

          Bake in the preheated oven for 30-35 minutes, stirring halfway through, until the potatoes are golden and tender and the sausage is nicely browned.

            Once cooked, remove from the oven and let it cool for a couple of minutes. Garnish with chopped fresh parsley before serving.
