Ingredients
  

4 boneless, skinless chicken breasts

1 cup honey

1/2 cup soy sauce

4 cloves garlic, minced

2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)

1 tablespoon olive oil

Salt and pepper to taste

Sesame seeds for garnish

Chopped green onions for garnish

Instructions
 

In a mixing bowl, whisk together honey, soy sauce, and minced garlic until well combined.

    Place chicken breasts in the slow cooker and season with salt and pepper.

      Pour the honey garlic mixture over the chicken.

        Add the mixed vegetables on top of the chicken.

          Drizzle olive oil over the veggies for some added flavor.

            Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.

              Once cooked, shred the chicken with two forks and stir everything together.

                Serve warm, garnished with sesame seeds and chopped green onions.
