Ingredients
  

1 pound ground beef

1 cup chopped onions

2 cups frozen mixed vegetables (corn, peas, carrots)

1 can (15 oz) black beans, rinsed and drained

1 can (10.5 oz) diced tomatoes with green chilies

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

2 cups cooked macaroni

1 cup shredded cheddar cheese

Instructions
 

In a skillet over medium heat, brown the ground beef with chopped onions until fully cooked; drain fat.

    In your slow cooker, combine the cooked beef and onions with frozen mixed vegetables, black beans, diced tomatoes, chili powder, cumin, salt, and pepper.

      Stir well to mix all ingredients evenly.

        Cover and cook on low for 6 hours or high for 3 hours.

          About 30 minutes before serving, stir in the cooked macaroni and cheese, allowing it to melt into the casserole.

            Serve hot and enjoy your hearty cowboy casserole!
