1 lb ground beef or turkey

1 cup diced onion

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 cup frozen mixed bell peppers

1 cup uncooked macaroni noodles

2 cups beef or vegetable broth

2 tsp chili powder

1 tsp cumin

1 tsp paprika

1 tsp onion powder

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey with the diced onion and minced garlic until the meat is cooked through. Drain any excess fat.

    Prepare the Slow Cooker: In the slow cooker, combine the browned meat mixture with black beans, corn, diced tomatoes (with juices), frozen bell peppers, uncooked macaroni, and beef or vegetable broth.

      Season the Mixture: Add chili powder, cumin, paprika, onion powder, salt, and pepper. Stir everything together until well combined.

        Cook on Low: Cover the slow cooker and cook on low for 4–6 hours or until the macaroni is tender and the flavors are well combined.

          Add Cheese: About 15–20 minutes before serving, stir in the shredded cheddar cheese and re-cover to allow it to melt.
