2 cups of chopped rhubarb

1 cup of granulated sugar

1/2 cup of unsalted butter, softened

1 teaspoon of vanilla extract

1/4 teaspoon of ground cinnamon

A pinch of salt

Instructions
 

In a medium saucepan, combine the chopped rhubarb and granulated sugar over medium heat. Stir occasionally until the rhubarb releases its juices and begins to soften (about 10 minutes).

    Remove the saucepan from heat and allow the mixture to cool slightly.

      In a mixing bowl, cream together the softened butter and vanilla extract until fluffy.

        Gradually fold in the rhubarb mixture into the butter until well incorporated.

          Add ground cinnamon and a pinch of salt. Mix until smooth.

            Transfer the rhubarb butter to a jar or airtight container and refrigerate for at least an hour before serving.
