1 lb shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 onion, sliced

Flour or corn tortillas

Fresh cilantro, chopped, for garnish

Instructions

In a large bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Set aside to marinate for 15 minutes.

Heat a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until cooked through and pink. Remove and set aside.

In the same skillet, add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly charred.

Return the shrimp to the skillet and mix with the vegetables. Cook together for an additional minute to heat through.

Serve the shrimp and veggies in warm tortillas, garnished with chopped cilantro and a squeeze of lime.
