Ingredients
  

1 lb shrimp, peeled and deveined

2 cups long-grain rice

4 cups chicken broth

1 small onion, finely chopped

1 green bell pepper, diced

2 stalks celery, chopped

3 cloves garlic, minced

1 lb ground pork or sausage

2 tsp Cajun seasoning

1/2 tsp black pepper

1/4 tsp cayenne pepper (adjust to taste)

2 green onions, chopped (for garnish)

2 tbsp olive oil

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the onion, bell pepper, celery, and garlic. Sauté until softened.

    Add the ground pork or sausage to the pot, breaking it apart with a spoon. Cook until browned.

      Stir in the Cajun seasoning, black pepper, and cayenne pepper. Mix well.

        Add the rice to the pot, stirring to coat the rice with the spices and meat.

          Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked.

            Once the rice has absorbed the liquid, fold in the shrimp and cook for an additional 5 minutes until the shrimp are pink and cooked through.

              Remove from heat and let sit for a few minutes. Fluff with a fork and garnish with green onions before serving.
