8 ounces veal cutlets

8 slices of prosciutto

8 fresh sage leaves

1 tablespoon olive oil

1 tablespoon butter

1/2 cup white wine

Salt and pepper to taste

Instructions
 

Lay the veal cutlets on a flat surface and season lightly with salt and pepper.

    Place a slice of prosciutto and a sage leaf on each cutlet, pressing them down gently.

      Heat olive oil and butter in a large skillet over medium heat.

        Once hot, add the cutlets, sage side down, and cook for 2-3 minutes until golden brown.

          Flip the cutlets over and cook for another 2 minutes.

            Add the white wine to the skillet, scraping up any brown bits.

              Let the sauce reduce for about 1-2 minutes, then remove the cutlets and plate them.

                Pour the sauce over the cutlets before serving.
