½ cup unsweetened cocoa powder

½ cup powdered sugar

½ teaspoon salt

½ cup cold unsalted butter, cubed

1 large egg yolk

3 tablespoons ice water

8 ounces dark chocolate (60-70% cocoa), chopped

1 cup heavy cream

1 teaspoon vanilla extract

Sea salt flakes (for topping)

Instructions

Make the Tart Crust: In a mixing bowl, combine flour, cocoa powder, powdered sugar, and salt. Add cubed butter and mix until crumbly. Stir in egg yolk and ice water until a dough forms.

Chill the Dough: Shape the dough into a disk, wrap it in plastic, and refrigerate for at least 30 minutes.

Preheat the Oven: Preheat your oven to 350°F (175°C).

Roll and Bake the Crust: Roll out the chilled dough and press it into a tart pan. Prick the bottom with a fork, bake for 15 minutes, then let it cool.

Prepare the Filling: In a bowl, heat heavy cream until just boiling. Pour over chopped chocolate and let it sit for 2 minutes. Stir in vanilla extract until smooth.

Fill the Tart: Pour the chocolate mixture into the cooled crust and spread evenly.

Chill: Refrigerate for at least 2 hours or until set.

Serve: Top with sea salt flakes just before serving.
