1 pint fresh strawberries, hulled and halved

1 tablespoon honey (or maple syrup)

1 tablespoon olive oil

1 cup ricotta cheese

1 teaspoon vanilla extract

Pinch of salt

4 slices of your favorite bread (like sourdough or whole grain)

Fresh mint leaves for garnish (optional)

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a bowl, toss the halved strawberries with honey (or maple syrup) and olive oil. Spread them out on a lined baking sheet.

      Roast the strawberries in the preheated oven for about 20 minutes, or until they are soft and caramelized.

        While the strawberries are roasting, combine ricotta cheese, vanilla extract, and a pinch of salt in a mixing bowl. Whip until creamy and smooth.

          Toast the bread slices until golden brown. You can do this in a toaster or place them under the broiler for a few minutes.

            Spread a generous layer of whipped ricotta on each slice of toasted bread.
