Ingredients
  

2 Ribeye steaks (about 1-inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

1 large onion, thinly sliced

2 cups mushrooms, sliced (button or cremini)

3 cloves garlic, minced

2 tablespoons unsalted butter

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1/2 cup beef broth

1/4 cup red wine (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Steaks: Sprinkle both sides of the ribeye steaks generously with salt and pepper.

    Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side, or until they reach your desired doneness. Remove and let rest.

      Sauté the Onions: In the same skillet, add the sliced onions. Cook over medium heat for about 10-15 minutes, stirring occasionally, until they turn golden and caramelized.

        Add Mushrooms: Add the sliced mushrooms and garlic to the onions. Continue cooking for another 5-7 minutes until the mushrooms are tender.

          Deglaze the Skillet: Pour in the beef broth and red wine (if using), scraping up any browned bits from the bottom of the skillet. Add the thyme and let it simmer for about 5 minutes to reduce.

            Finish the Dish: Stir in the butter until melted and combined. Return the steaks to the skillet to soak up some of the sauce for about 1 minute.

              Serve: Plate the ribeye steak and top with the onion and mushroom mixture. Garnish with fresh parsley.
