2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

2 cups rhubarb, chopped

½ cup brown sugar (for topping)

1 teaspoon cinnamon (for topping)

Optional: powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

    In a bowl, whisk together the flour, baking powder, baking soda, and salt.

      In a separate bowl, cream the softened butter and granulated sugar until light and fluffy.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          Mix in the sour cream until fully incorporated.

            Gradually add the dry ingredients to the wet mixture, mixing until just combined.

              Fold in the chopped rhubarb gently.

                Pour the batter into the prepared pan and smooth the top.

                  In a small bowl, mix together the brown sugar and cinnamon for the topping. Sprinkle it evenly over the batter.

                    Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

                      Let the cake cool in the pan before serving. Dust with powdered sugar if desired.
