Ingredients
  

1 cup diced rhubarb

1 cup fresh raspberries

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup milk

1/4 cup powdered sugar (for dusting)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a loaf pan.

    In a small saucepan over medium heat, cook the diced rhubarb with 1/4 cup of sugar for about 5 minutes, until tender. Let cool.

      In a mixing bowl, cream together the softened butter and the remaining sugar until light and fluffy.

        Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

          In another bowl, whisk together the flour, baking powder, and salt.

            Gradually add the dry ingredients to the wet mixture, alternating with the milk, until well combined.

              Divide the batter in half. Gently fold in the cooled rhubarb into one-half and the fresh raspberries into the other half.

                Spoon the rhubarb and raspberry batters into the prepared loaf pan in alternating spoonfuls. Use a knife to gently swirl the batters together for a marbled effect.

                  Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                    Let the cake cool in the pan for 10 minutes before transferring it to a wire rack. Dust with powdered sugar before serving.
