Ingredients
  

2 cups all-purpose flour

1 cup sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, melted

1 cup buttermilk

2 large eggs

2 cups chopped rhubarb

1 tsp vanilla extract

Optional: 1/2 cup chopped nuts (walnuts or pecans)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.

    In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix well.

      In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla until well combined.

        Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

          Gently fold in the chopped rhubarb and nuts (if using).

            Pour the batter into the prepared loaf pan and spread evenly.

              Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.

                Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
