Ingredients
  

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 cups rhubarb, chopped

1 cup sugar

1 teaspoon vanilla extract

2 (8-ounce) packages cream cheese, softened

½ cup sour cream

3 large eggs

¼ cup all-purpose flour

1 teaspoon lemon juice

½ teaspoon salt

Instructions
 

Preheat the oven to 350°F (175°C).

    In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of a greased 9x13 inch baking pan.

      In a saucepan over medium heat, combine chopped rhubarb and ½ cup of sugar. Cook until rhubarb is soft, about 5-7 minutes; set aside to cool.

        In a large bowl, beat the cream cheese and remaining sugar until smooth. Add sour cream, eggs (one at a time), flour, lemon juice, and salt; mix until well combined.

          Fold in the cooked rhubarb gently into the cream cheese mixture until evenly distributed.

            Pour the mixture over the graham cracker crust in the baking pan.

              Bake for 35-40 minutes or until the center is set and the edges are lightly golden.

                Allow to cool completely in the pan, then refrigerate for at least 4 hours before cutting into bars.
