Ingredients

2 cups of cooked jasmine rice

1 cup of diced chicken breast

1 cup of mixed vegetables (carrots, peas, and corn)

3 eggs, lightly beaten

3 tablespoons of soy sauce

2 tablespoons of sesame oil

2 cloves of garlic, minced

2 green onions, sliced

Salt and pepper to taste

Instructions

Heat sesame oil in a large skillet or wok over medium-high heat.

Add the minced garlic and sauté for about 30 seconds until fragrant.

Toss in the diced chicken breast and cook until browned and cooked through.

Push the chicken to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until fully cooked.

Add the mixed vegetables to the skillet and stir well with the chicken and eggs.

Incorporate the cooked jasmine rice, breaking apart any clumps, and mix well.

Drizzle soy sauce over the rice and stir to combine, making sure every grain is coated.

Season with salt and pepper, and sprinkle sliced green onions on top before serving.
