Ingredients
  

1 cup all-purpose flour

1 tsp baking powder

1/4 tsp salt

3 eggs

1 cup granulated sugar

1/4 cup lemon juice

Zest of 1 lemon

1/4 cup milk

1/2 cup blackberry jam

1 cup heavy cream

2 tbsp powdered sugar

Fresh blackberries and lemon slices for garnish

Instructions
 

Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper, lightly greased.

    In a mixing bowl, whisk together flour, baking powder, and salt. Set aside.

      In a separate bowl, beat eggs and granulated sugar until light and fluffy. Add lemon juice and zest, mixing until combined.

        Gradually fold in the flour mixture and milk until just combined, being careful not to overmix.

          Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes, or until golden and springs back when touched.

            While baking, prepare a clean kitchen towel by dusting it with powdered sugar.

              Once baked, immediately invert the cake onto the prepared towel, removing the parchment paper. Roll the cake tightly with the towel, starting from one short side. Let it cool completely.

                In a bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and continue whipping until just stiff.

                  Unroll the cooled cake carefully, spread blackberry jam over the surface, and then layer whipped cream on top.

                    Roll the cake back up without the towel, and place seam side down. Chill in the refrigerator for at least 1 hour.

                      Before serving, slice the roll and garnish with fresh blackberries and lemon slices for presentation.
