2 lbs red potatoes

2 lbs white potatoes

1 lb blue potatoes (or purple potatoes for color)

1 cup mayonnaise

½ cup sour cream

2 tablespoons Dijon mustard

1 cup celery, diced

½ cup red onion, diced

½ cup fresh parsley, chopped

Salt and pepper to taste

4 boiled eggs, chopped (optional)

1 tablespoon apple cider vinegar
