Ingredients

2 ½ cups all-purpose flour

1 ½ cups granulated sugar

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cocoa powder

1 ½ cups vegetable oil

1 cup buttermilk, room temperature

2 large eggs, room temperature

2 tablespoons red food coloring

1 teaspoon vanilla extract

1 teaspoon white vinegar

For the Cream Cheese Frosting:

1 cup unsalted butter, softened

16 oz cream cheese, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon heavy cream (optional, for a smoother texture)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder until well combined.

Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until the mixture is smooth and uniform.

Blend Together: Gradually add the wet mixture to the dry ingredients, mixing on medium speed until well combined. Scrape down the sides of the bowl to ensure no dry bits are left unblended.

Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the pans for about 10 minutes, then turn them out onto wire racks to cool completely.

Prepare the Frosting: While the cakes are cooling, in a large bowl, beat the softened butter and cream cheese together until fluffy. Gradually add the powdered sugar, mixing until combined. Add the vanilla extract, and if desired, incorporate the heavy cream for a smoother texture. Beat on high speed until the frosting is light and fluffy.

Assemble the Cake: Once the cake layers are completely cooled, place one layer on a serving platter. Spread a generous layer of cream cheese frosting on top. Place the second layer on top and use the remaining frosting to cover the sides and top of the cake as desired.

Decorate (Optional): For a romantic touch, decorate with heart-shaped sprinkles, fresh raspberries, or chocolate shavings.

Serve & Enjoy: Slice the cake and serve it to your loved ones. Enjoy the beautiful, rich flavors of your homemade red velvet cake this Valentine's Day!
