1/2 cup lemon juice

1 cup unsalted butter, softened

1 cup granulated sugar

1 lemon pudding mix (dry)

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon lemon zest

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the lemon pudding mix and mix until combined.

        Beat in the eggs one at a time, then stir in the lemon zest.

          In a separate bowl, whisk together the flour, baking soda, and salt.

            Gradually add the dry ingredients to the wet mixture, stirring until combined.

              Drop tablespoon-sized balls of dough onto a baking sheet, spacing them apart.

                Bake for 10-12 minutes, or until the edges are lightly golden.

                  Allow cookies to cool, then dust with powdered sugar before serving.
