Ingredients

2 cups crushed graham crackers

1/2 cup unsalted butter, melted

1 cup granulated sugar

3 (8 oz) packages cream cheese, softened

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup fresh blueberries

1/4 cup blueberry jam

1 tablespoon lemon juice

Blue food coloring (optional)

Instructions

Preheat your oven to 325°F (160°C).

In a bowl, combine crushed graham crackers and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form a crust.

In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth.

Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.

Gently fold in fresh blueberries and blueberry jam. If you want a darker blue, add a few drops of blue food coloring to achieve your desired hue.

Pour the cheesecake mixture over the crust in the springform pan.

Bake for about 50-60 minutes, or until the edges are set and the center has a slight wobble.

Turn off the oven and leave the cheesecake inside for 1 hour.

Remove from the oven and let it cool to room temperature before refrigerating for at least 4 hours, or overnight.

Before serving, drizzle with extra blueberry jam and garnish with fresh blueberries.
