Ingredients
  

1 cup unsalted butter, softened

½ cup powdered sugar

2 cups all-purpose flour

½ teaspoon vanilla extract

½ teaspoon almond extract

½ cup raspberry jam (seedless if preferred)

A pinch of salt

Instructions
 

In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.

    Gradually add in the flour and salt, mixing until combined.

      Stir in the vanilla and almond extracts until fully incorporated.

        Take about 1/3 of the dough and place it in a separate bowl. Add the raspberry jam to this portion and gently mix to create a swirl effect—don’t overmix!

          Roll out each portion of dough into two logs, about 1.5 inches in diameter.

            Wrap each log in plastic wrap and refrigerate for at least 1 hour or until firm.

              Preheat your oven to 350°F (175°C).

                Slice the chilled logs into 1/4 inch rounds and place on a parchment-lined baking sheet.

                  Bake for 10-12 minutes, or until the edges are lightly golden.

                    Allow the cookies to cool on a wire rack before enjoying!
