For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

¼ teaspoon salt

For the Cheesecake Filling:

2 (8 oz) packages cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/4 cup sour cream

For the Raspberry Swirl:

1 cup fresh raspberries (or frozen, thawed)

¼ cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish. Bake for about 10 minutes, then remove and let cool slightly.

      Make the Raspberry Swirl: In a small saucepan over medium heat, combine the raspberries, sugar, lemon juice, and cornstarch. Stir gently until the mixture begins to bubble and thicken, about 5-7 minutes. Remove from heat and allow to cool.

        Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar and beat until fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until smooth.

          Assemble the Cheesecake: Pour the cream cheese mixture over the cooled crust, spreading it evenly. Spoon dollops of the raspberry mixture on top and use a knife or skewer to swirl it into the cheesecake filling, creating a marbled effect.

            Bake the Cheesecake Bars: Bake in the preheated oven for 30-35 minutes or until the edges are set but the center is slightly jiggly. Turn off the oven and let the bars cool in the oven for one hour with the door slightly ajar.

              Chill: Once cooled, transfer the bars to the refrigerator and let them chill for at least 4 hours or overnight for best results.

                Serve: Carefully lift the cheesecake bars out of the baking dish using the parchment paper. Cut into squares and serve chilled. Optional: Top with additional raspberries or a dusting of powdered sugar.
