1 cup crushed pistachios

1 cup fresh raspberries

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

2 cups raspberry puree (fresh or frozen)

1/4 cup gelatin (for setting)

1/2 cup water (for gelatin)

1/2 teaspoon salt

Extra crushed pistachios and berries for garnish

Instructions
 

Begin by soaking the gelatin in 1/2 cup of water; let it bloom for about 5 minutes.

    In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

      Heat the bloomed gelatin in the microwave until fully dissolved, then mix it into the raspberry puree.

        Gently fold the raspberry mixture into the whipped cream until well combined.

          Layer the crushed pistachios at the bottom of small serving cups or molds.

            Pour the raspberry mousse on top, filling to about halfway.

              Allow it to set in the fridge for at least 4 hours or overnight.

                Once set, garnish with additional whipped cream, crushed pistachios, and fresh raspberries before serving.
