For the Loaf:

1 cup fresh raspberries

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup milk

1 tablespoon lemon juice

For the Tangy Icing:

1 cup powdered sugar

2 tablespoons lemon juice

Zest of 1 lemon

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.

    In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

      Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

        In another bowl, mix the flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the milk and lemon juice. Mix until just combined.

            Gently fold in the fresh raspberries.

              Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                While the loaf is baking, prepare the tangy icing by whisking together powdered sugar, lemon juice, and lemon zest until smooth.

                  Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

                    Drizzle the icing over the cooled loaf before slicing and serving.
