Ingredients
  

1 lb raw shrimp, peeled and deveined

4 cups seafood or chicken broth

1 tablespoon olive oil

1 small onion, diced

4 cloves garlic, minced

1-inch piece ginger, grated

1 medium red bell pepper, sliced

1 medium zucchini, sliced

1 can (14.5 oz) diced tomatoes with green chilies

1 tablespoon chili paste (adjust to taste)

1 teaspoon smoked paprika

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Stir in the garlic and ginger, cooking for another minute until fragrant.

      Add the red bell pepper and zucchini to the pot, and cook for about 5 minutes until they start to soften.

        Pour in the broth and add the diced tomatoes along with their juices. Stir in the chili paste and smoked paprika, then season with salt and pepper to taste.

          Bring the soup to a boil, then reduce heat and let it simmer for about 10 minutes.

            Add the shrimp to the pot and cook for an additional 3-5 minutes until the shrimp are pink and cooked through.

              Before serving, stir in the lime juice and give the soup a final taste adjustment.

                Ladle the soup into bowls, and garnish with chopped green onions and cilantro.
