4 liters of whole milk

1/2 cup white vinegar or lemon juice

1 teaspoon salt

Water (for rinsing)

Optional: herbs and spices for flavor, such as oregano or chili flakes

Instructions
 

In a large pot, heat the milk over medium heat until it reaches a temperature of about 185°F (85°C). Stir occasionally to prevent scorching.

    Once heated, remove the pot from the heat and slowly add the vinegar or lemon juice while gently stirring. You'll notice the milk beginning to curdle; this is the formation of curds and whey.

      Let the mixture sit for about 10 minutes to allow the curds to fully separate from the whey.

        Carefully strain the mixture using a cheesecloth or a fine mesh strainer to collect the curds. Rinse the curds under cold water to remove any excess acidity.

          Transfer the curds to a bowl and mix in the salt. For extra flavor, you can add your choice of herbs and spices at this point.

            Knead the curds with your hands until smooth and pliable. If the curds are too dry, you can dip them briefly in warm water to soften them.

              Shape the cheese into balls or any desired form, then place them in a container.
