1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon salt

1 cup granulated sugar

3 large eggs

1 cup pumpkin puree

1/3 cup vegetable oil

1 teaspoon vanilla extract

1 cup caramel sauce (for filling)

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

1/2 teaspoon ground cinnamon (for glaze)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 15x10 inch jelly roll pan, lining it with parchment paper.

    In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.

      In a separate bowl, combine sugar and eggs, beat until light and fluffy.

        Mix in the pumpkin puree, vegetable oil, and vanilla extract until well incorporated.

          Gradually add the flour mixture, stirring until the batter is smooth.

            Pour the batter into the prepared pan, spreading it evenly.

              Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.

                Once baked, remove from the oven and immediately roll the cake (with the parchment) from the shorter side to create a log; allow to cool completely.

                  Once cool, unroll the cake and spread caramel sauce over the surface. Roll it back up tightly.

                    For the cinnamon glaze, whisk together powdered sugar, milk, and ground cinnamon until smooth. Drizzle over the rolled cake.
