Sausage gravy has deep historical roots in Southern cooking, tracing back to the early 19th century. This dish emerged from the need to make the most of available ingredients, particularly in rural households where livestock was often raised for both meat and sustenance. Breakfast sausage, made from the leftover bits of pork, was seasoned and cooked to create a flavorful base for gravy. The addition of milk or cream thickened the mixture, transforming it into the creamy concoction we know and love today.

Ingredients

1 pound breakfast sausage

1/4 cup all-purpose flour

2 cups whole milk

Salt and pepper, to taste

Optional: crushed red pepper flakes for a little heat

Instructions

In a large skillet over medium heat, cook the sausage until browned and crumbled, about 5-7 minutes.

Once the sausage is fully cooked, sprinkle the flour over it, stirring to combine. Allow it to cook for 1-2 minutes to remove the raw flour taste.

Gradually whisk in the milk, stirring constantly to avoid lumps.

Continue cooking until the gravy thickens, which should take about 5-10 minutes.

Season with salt, pepper, and optional red pepper flakes to taste. Serve hot over warm biscuits or toast.
