2 cups crushed pineapple, drained

1 cup granulated sugar

3/4 cup unsalted butter, softened

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

4 large eggs

1 teaspoon vanilla extract

1 cup diced fresh pineapple (for garnish)

1 cup shredded coconut (for topping)

Whipped cream, for serving

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.

    In a large mixing bowl, cream together the butter and sugar until light and fluffy.

      Beat in the eggs, one at a time, then stir in the vanilla extract.

        In another bowl, whisk together the flour, baking soda, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the crushed pineapple. Mix until just combined.

            Pour the batter into the prepared baking dish and smooth the top.

              Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.

                Allow the cake to cool completely in the pan before adding toppings.

                  Once cooled, spread whipped cream over the top and garnish with diced fresh pineapple and shredded coconut.
