1 cup brown sugar

1/2 cup butter (melted)

1 can (20 oz) pineapple slices

Maraschino cherries (for garnish)

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 cup milk

3 large eggs

1 tsp vanilla extract

2 tsp baking powder

2 cups fresh pineapple chunks

1 cup coconut milk

1/4 cup honey or agave syrup

1 tsp lime juice

1 sheet of puff pastry

1 cup crushed pineapple (drained)

1/4 cup sugar

1 tbsp cornstarch

1 tsp vanilla extract

Egg wash (1 egg + 1 tbsp water)

1 cup coconut milk

1/4 cup chia seeds

2 tbsp maple syrup

1 cup pineapple chunks

1 ripe pineapple (peeled and sliced)

2 tbsp honey

1 tsp cinnamon

1 tbsp butter (for grilling)

Instructions
 

Preheat the oven to 350°F (175°C).

    Pour the melted butter into a round cake pan and sprinkle with brown sugar.

      Arrange pineapple slices on top, placing a cherry in the center of each slice.

        In a bowl, mix flour, sugar, baking powder, and salt.

          Add milk, eggs, and vanilla to the dry ingredients and mix until just combined.

            Pour the batter over the pineapple layer in the pan.

              Bake for 30-35 minutes until golden brown.

                Let it cool for 10 minutes before inverting onto a serving plate.
