Ingredients
  

2 cups crushed pineapple (drained)

1 cup cream cheese (softened)

2 cups powdered sugar

1 cup shredded coconut

1 cup chopped pecans (optional)

1 teaspoon vanilla extract

Green and red sprinkles for decoration

Instructions
 

In a mixing bowl, combine the softened cream cheese and drained crushed pineapple.

    Gradually add in powdered sugar until well incorporated.

      Mix in vanilla extract and shredded coconut (and pecans if using) until the mixture is smooth.

        Cover the bowl and refrigerate the mixture for about 30 minutes to firm up.

          Once chilled, take small portions of the mixture and roll them into balls.

            Roll the balls in green and red sprinkles to create a festive appearance.

              Place on a parchment-lined tray and refrigerate until ready to serve.
