Ingredients
  

2 cups cooked rice

1 pound boneless, skinless chicken breasts, cubed

1 cup fresh pineapple chunks (or canned)

1 bell pepper, diced (any color)

1 onion, chopped

2 cloves garlic, minced

1 cup chicken broth

1/4 cup soy sauce

2 tablespoons olive oil

1 tablespoon ginger, grated

Salt and pepper to taste

Green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Instructions
 

Heat olive oil in a large skillet over medium heat. Add cubed chicken and season with salt and pepper; cook until golden brown and cooked through.

    Add chopped onion, garlic, and ginger to the skillet, sauté until onions are translucent.

      Stir in diced bell pepper and pineapple chunks; cook for about 3-4 minutes until the vegetables soften.

        Pour in the chicken broth and soy sauce; reduce heat and simmer for 5 minutes.

          Mix in the cooked rice, stirring until fully combined and heated through.

            Serve hot, garnishing with green onions and sesame seeds if desired.
