Pepperoni and Cheese Calzones

Ingredients
  

2 cups all-purpose flour

1 packet active dry yeast

¾ cup warm water

1 tablespoon sugar

1 teaspoon salt

2 tablespoons olive oil

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1 cup sliced pepperoni

1 egg (for egg wash)

Italian seasoning (optional for topping)

Instructions
 

In a bowl, mix warm water, sugar, and yeast. Allow it to sit until foamy (about 5 minutes).

    In another bowl, combine flour and salt. Create a well in the center and add yeast mixture and olive oil.

      Mix until dough forms; knead for about 5-7 minutes until smooth.

        Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

          Preheat the oven to 450°F (230°C).

            On a floured surface, roll out the dough into a large circle (about 12 inches in diameter).

              Spread ricotta cheese on one half of the dough, then top with mozzarella and pepperoni. Fold the other half of the dough over the filling and seal the edges.

                Place calzones on a baking sheet lined with parchment paper. Brush the tops with beaten egg and sprinkle with Italian seasoning if desired.

                  Bake for 15-20 minutes or until golden brown.

                    Let cool slightly before serving. Enjoy your delicious calzones!
