Ingredients
  

2 cups all-purpose flour

1 ½ cups sugar

½ cup unsalted butter, softened

1 cup milk

3 large eggs

2 tsp baking powder

1 tsp vanilla extract

½ tsp salt

2 cups fresh peaches, diced

2 cups heavy cream

¼ cup powdered sugar

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.

    In a large bowl, beat the softened butter and sugar until light and fluffy.

      Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla.

        In another bowl, whisk together the flour, baking powder, and salt.

          Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.

            Gently fold in the diced peaches.

              Divide the batter evenly among the prepared cake pans.

                Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

                  In a mixing bowl, whip the heavy cream with the powdered sugar until stiff peaks form.

                    Once the cakes are cool, place one layer on a serving plate and spread a layer of whipped cream over it, followed by more diced peaches. Repeat with the second layer.

                      Place the final layer on top and frost the top and sides of the cake with the remaining whipped cream. Garnish with mint leaves and additional peach slices, if desired.
