Ingredients
  

2 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 cup whole milk

1 teaspoon vanilla extract

2 cups fresh peaches, diced

1 teaspoon cinnamon

1 tablespoon lemon juice

1/4 cup brown sugar (for topping)

Whipped cream (for serving, optional)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a muffin tin.

    In a large bowl, mix the flour, granulated sugar, baking powder, and salt.

      In another bowl, whisk together the melted butter, milk, and vanilla extract.

        Combine the wet and dry ingredients until just mixed. Do not overmix.

          Fold in the diced peaches, cinnamon, and lemon juice until evenly distributed.

            Spoon the mixture into the muffin tins, filling them about 2/3 full.

              In a small bowl, mix the brown sugar with a pinch of cinnamon and sprinkle on top of the batter.

                Bake for 18-20 minutes or until golden brown.

                  Allow to cool slightly before removing from the tin. Serve warm with whipped cream if desired.
