Ingredients

For the Peach Cake:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

¾ cup brown sugar, packed

3 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 ½ cups fresh peaches, peeled and diced

For the Brown Sugar Frosting:

½ cup unsalted butter, softened

1 cup brown sugar, packed

¼ cup milk

2 cups powdered sugar

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs one at a time and mix in the vanilla extract.

Combine Mixtures: Add the dry ingredients to the creamed mixture alternately with the sour cream, beginning and ending with the dry ingredients. Fold in the diced peaches gently.

Bake: Divide the batter evenly between the prepared cake pans and smooth the tops. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Prepare Frosting: For the brown sugar frosting, melt the butter in a saucepan over medium heat. Stir in the brown sugar and milk, bringing the mixture to a boil. Remove from heat and let it cool for 5 minutes.

Mix the Frosting: Gradually whisk in powdered sugar and vanilla extract until smooth and creamy.

Assemble the Cake: Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous layer of frosting on top, place the second layer on top, and frost the top and sides of the cake.

Decorate: Feel free to garnish with additional fresh peaches or a sprinkle of chopped nuts for a delightful finish!
