Passionfruit Cake with White Chocolate Buttercream

Ingredients
  

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup passionfruit puree (fresh or canned)

4 large eggs

1 tbsp baking powder

½ tsp salt

1 tsp vanilla extract

1 cup whole milk

8 oz white chocolate, chopped

1 cup unsalted butter, softened (for frosting)

4 cups powdered sugar

2 tbsp heavy cream

1 tsp vanilla extract (for frosting)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    In a mixing bowl, cream together the softened butter and sugar until light and fluffy.

      Add the eggs, one at a time, mixing well after each addition. Stir in the passionfruit puree and vanilla extract.

        In another bowl, whisk together the flour, baking powder, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until smooth.

            Divide the batter evenly between the prepared cake pans.

              Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

                For the frosting, melt the white chocolate in a heatproof bowl over simmering water. Let it cool slightly.

                  In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar and mix until combined.

                    Stir in melted white chocolate, heavy cream, and vanilla until smooth and fluffy.

                      Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of white chocolate buttercream over the top.

                        Place the second cake layer on top and frost the entire cake with the remaining buttercream.

                          Optionally, decorate with fresh passionfruit pulp or white chocolate shavings.
