4 boneless, skinless chicken breasts

4 slices of bacon

1 cup shredded Monterey Jack cheese

1 cup shredded Cheddar cheese

1/2 cup honey mustard dressing

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Marinate the Chicken: In a bowl, mix honey mustard dressing with garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken breasts in this mixture, cover, and marinate in the refrigerator for at least 30 minutes (or up to overnight for best flavor).

    Cook the Bacon: In a skillet over medium heat, cook the bacon slices until crispy. Once cooked, remove from the skillet and place on paper towels to cool. Reserve the bacon fat in the skillet.

      Sear the Chicken: In the same skillet with the bacon fat, heat olive oil over medium-high heat. Remove the chicken from the marinade and sear them in the skillet for about 4-5 minutes on each side, until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

        Add Cheese and Bacon: Once the chicken is cooked, top each breast with half of the Monterey Jack and half of the Cheddar cheese. Crumble the cooked bacon on top of the cheese. Cover the skillet with a lid and cook for an additional 2-3 minutes until the cheese is melted.

          Serve: Transfer the cheesy, bacon-topped chicken onto a serving plate. Garnish with freshly chopped parsley. Serve alongside roasted vegetables or a side salad for a complete meal.
