Ingredients
  

1 lb ground beef (or turkey for a lighter option)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup uncooked rice (long-grain white or brown)

2 cups beef or vegetable broth

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

Fresh parsley for garnish (optional)

Sauté the Base: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula as it cooks (about 5-7 minutes). Add the diced onion and garlic, cooking until the onion is translucent (about 3-4 minutes).

    Add Bell Pepper and Seasoning: Stir in the diced bell pepper, Italian seasoning, paprika, salt, and pepper. Cook for an additional 2-3 minutes until the pepper starts to soften.

      Combine Rice and Tomatoes: Add the uncooked rice and the can of diced tomatoes (with juices) to the skillet, stirring everything to combine well.

        Add Broth and Simmer: Pour in the broth and bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes (or until the rice is cooked and has absorbed most of the liquid).

          Cheese it Up: Once the rice is tender, sprinkle the cheese on top. Cover the skillet again and let it sit for another 2-3 minutes, allowing the cheese to melt.

            Garnish and Serve: Remove from heat and fluff the mixture with a fork. Garnish with fresh parsley if desired, and serve hot!
