1 lb large shrimp, peeled and deveined

1 cup orzo pasta

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes

3 cups vegetable broth

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Heat olive oil in a large pot over medium heat. Add onion and bell pepper, sauté for about 5 minutes until softened.

    Stir in garlic and cook for an additional minute until fragrant.

      Add the diced tomatoes, vegetable broth, orzo pasta, paprika, Italian seasoning, salt, and pepper. Stir well to combine.

        Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 10-12 minutes, or until the orzo is cooked al dente.

          Fold in the shrimp, cover again, and cook for an additional 5-7 minutes, or until shrimp are pink and cooked through.

            Remove from heat, garnish with fresh parsley, and serve with lemon wedges on the side.
