1 lb boneless, skinless chicken thighs

1 cup orzo pasta

1 medium onion, diced

2 garlic cloves, minced

1 red bell pepper, diced

1 zucchini, diced

1 cup cherry tomatoes, halved

2 cups low-sodium chicken broth

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

1/2 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, chopped

Juice of 1 lemon

Feta cheese for garnish (optional)

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, dried oregano, and dried basil. Set aside.

    Sauté the Vegetables: In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced onion, red bell pepper, and zucchini. Sauté for about 5-7 minutes until the vegetables are softened.

      Cook Garlic and Chicken: Add minced garlic to the pot and stir for 1 minute until fragrant. Push the vegetables to the side and add the seasoned chicken thighs. Sear for about 4-5 minutes on each side until golden brown.

        Add Orzo and Broth: Once the chicken is browned, stir in the orzo pasta, cherry tomatoes, chicken broth, and red pepper flakes (if using). Bring to a boil.

          Simmer the Dish: Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes until the chicken is cooked through (internal temperature should be 165°F) and the orzo is tender, stirring occasionally.

            Finish with Olives and Herbs: Remove the pot from heat. Stir in Kalamata olives, lemon juice, and fresh parsley. Let it sit covered for 5 minutes.

              Serve: Slice the chicken into bite-sized pieces, serve the orzo mixture in bowls, and top with feta cheese if desired. Enjoy your delicious and healthy Mediterranean meal!
