Ingredients
  

1.5 lbs beef stew meat, cut into cubes

2 tablespoons olive oil

1 large onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground cinnamon

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup red wine (optional, can replace with beef broth)

4 cups beef broth

1 can (14 oz) diced tomatoes

2 cups orzo pasta

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and season with salt and pepper. Sear the beef on all sides until browned, about 5-7 minutes. Remove the beef from the pot and set aside.

    In the same pot, add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes. Stir in the cinnamon, oregano, and smoked paprika, cooking for another minute until fragrant.

      If using, pour in the red wine and let it simmer for about 2-3 minutes, scrapping any brown bits from the bottom of the pot with a wooden spoon. If not using wine, skip this step.

        Return the browned beef to the pot, then add the beef broth and diced tomatoes. Bring the mixture to a simmer.

          Once it’s simmering, add the orzo pasta, stirring well to combine. Cover the pot and reduce the heat to low. Let it cook for about 20-25 minutes, stirring occasionally, until the orzo is cooked and the beef is tender.

            Once cooked, taste and adjust the seasoning with additional salt and pepper, if needed. Stir in the grated Parmesan cheese until melted and combined.

              Remove from heat and let sit for a few minutes before serving. Garnish each serving with freshly chopped parsley.
