Ingredients
  

2 boneless, skinless chicken breasts

2 medium sweet potatoes, peeled and diced

1 red bell pepper, diced

1 yellow onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with salt, pepper, smoked paprika, and thyme. Rub the spices into the chicken evenly.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced sweet potatoes, onion, and red bell pepper. Sauté for about 8-10 minutes, stirring occasionally, until the vegetables are tender and slightly caramelized.

        Add Garlic: Stir in the minced garlic and cook for an additional 2 minutes, being careful not to burn it.

          Combine Ingredients: Return the chicken to the skillet, nestling it among the vegetables. Cover the skillet with a lid and let everything cook together for another 5 minutes, allowing the flavors to meld.

            Serve: Remove the lid and plate the chicken and sweet potatoes together. Garnish with freshly chopped parsley before serving.
