Ingredients
  

1 cup oatmeal cookies, crushed

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 large eggs

1/2 cup sour cream

1/2 cup mini chocolate chips (optional for extra fun)

Instructions
 

Preheat the oven to 325°F (163°C).

    In a mixing bowl, combine crushed oatmeal cookies, granulated sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

      In another bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth.

        Add the eggs one at a time, mixing well after each addition. Then fold in the sour cream and mini chocolate chips if desired.

          Pour the cheesecake filling over the crust in the springform pan.

            Bake for approximately 55-60 minutes or until the edges are set, and the center is slightly jiggly.

              Turn off the oven and leave the cheesecake inside with the door ajar for about an hour to cool slowly.

                After cooling, refrigerate for at least 4 hours or overnight before serving.
